Portuguese Rice



Ingredients:

1 onion chopped
3 garlic cloves minced
1 bay leaf
1/2 teaspoon of crushed red pepper flakes
(or 1/4 if you don't want it spicy)
3 plum tomatoes, seeded and chopped
1-1/2 cups of long grain rice
2 tablespoons of chopped cilantro or parsley
2 cups of salted water or broth
salt and pepper to taste

Sautee the onions in the pot with some olive oil. Cook until they start to soften, about 3-4 minutes.


Add garlic, red pepper flakes, bay leaf and cook for 1 minute.


Add your chopped tomatoes and cook for about 2 more minutes.


Add your cilantro and your rice.


Add 2 cups of your salted water or broth. Test for seasoning.


Cook for 20 minutes without stirring or fluffing. After the 20 minutes, stir and fluff carefully so as to not break up the tomatoes. Turn off heat and let sit for 5 minutes. Serve warm. Enjoy!
